1/3 cup of milk
1 tablespoon of pista
Few drops orange color
1 tablespoon raisins
A pinch of baking powder
½ kg of sugar
½ kg of besan
Mix the besan and the baking powder well with a sieve.
Add 2 tablespoons of ghee to the above mixture. Pour water and milk to the mixture and make a thick batter.
In a kadai, heat the ghee. You need a spoon with holes through which you can pour the thick batter to make boondi.
Rub the thick batter on the spoon and small drops of the batter known as boondis will drop in ghee or oil.
Fry the boondis until they become light brown. Remove them and keep them in a separate container.
Prepare the sugar syrup by adding sugar, milk and water.
In the sugar syrup, add orange color and put the fried boondis. Mix them well. You can even add raisins and pistas to the mixture.
When the boondi mixture gets cool, with hand you can pick small amount of boondi mixture and make laddus.
Motichoor Laddus are ready.
2 cups of flour
1 ½ tablespoon of rice flour
¼ th teaspoon of baking powder
2 tablespoons of plain yogurt
1 ¼ th cups of warm water
1 teaspoon of saffron powder
3 cups of sugar
2 2/3 rd cups of water
½ teaspoon of green cardamom seeds powder
1 ½ tablespoon of rose water
Vegetable oil or ghee
Mix the flour, rice flour, baking powder and curd. Pour water to the mixture and mix the ingredients properly.
Add saffron powder to the mixture and mix it well.
Prepare sugar syrup by adding sugar and water. Add cardamom and saffron powder just before the sugar syrup is ready.
Place a kadai on the oven. Heat ghee or vegetable oil in the kadai.
Take a coconut shell with a hole at the center.
Pour the flour batter into the coconut shell and allow the batter to pass through the hole into the kadai. As the batter falls in the kadai, you can form coils by moving your hand.
Fry the coils until they turn light brown.
Keep the fried coils (also known as Jalebi) in the sugar syrup.
After few minutes, take them out and serve hot.
1 cup of almonds
½ cup of sugar
¼ teaspoon cardamom powder
For about 30 minutes, soak the almonds in warm water.
With the help of mixy or grinder, peel the almonds and make its paste.
In a container, mix ¼ cup of sugar with ½ cup of water and prepare the sugar syrup.
Add the cardamom paste, almond paste to the sugar syrup. Cook in a low flame and stir the mixture slowly until it leaves the side of the container.
Pour the mixture in a plate and keep it cool.
Cut it (almond mixture) into small pieces.
Badam Barfi is ready.
