Heat oil in a pan and add onions to it and sauté.

Add garlic, green bell pepper and cook till the onions are softened.

Then add baked beans, red chili flakes, and mixed dried herbs and mix and cook till it is almost dry.

To bake the tortillas preheat the oven to 200°C.

Till the oven heats up make the sauce, sauté garlic in one tablespoon of olive oil. Add pureed tomatoes, sugar, red chili flakes, oregano, and half the mozzarella cheese and cook till the mixture starts to reach a sauce-like consistency.

Step 7

To wrap up the tortillas place a tortilla on the worktop, spread some of the sauteed fillings vertically on the tortilla, and top it with paneer.

Step 8

For the finale roll the tortilla carefully so that the filling doesn’t spill. Carefully place it in a baking dish one by one.

This is the best dish if your dad loves to experiment with food. Step 1

In a very large skillet with high sides or a saucepan, heat the olive oil over medium-high heat. Sweat the garlic for 1-2 minutes, then add tomatoes, salt, and herbs. Cook for 30 minutes (bubbling), stirring occasionally. Invert a mesh strainer over the top of the pan to prevent splatter, if desired. Preheat oven to 400º F.

Step 2

Meanwhile, prep two baking sheets with parchment paper. Peel the eggplants by slicing off the top and bottom and using the cut edge to start your vegetable peeler. Holding the eggplant vertically, cut the eggplants into 1/2-inch slices. Arrange in one layer on a baking sheet. Sprinkle with salt and drizzle liberally with olive oil. 

Step 3

Bake eggplant for 30-40 minutes at 400º, turning once, until very, very soft and browned in some places. Spray both sides of each slice of bread with spray oil and “grill” in a hot skillet until browned on both sides. You can also simply toast the bread, but to get more flavor grilling is the best option.

Step 4 

In a large baking dish (a lasagna dish), spread 1 1/2 cups of tomato sauce. Line the bottom of the dish with bread, filling as many gaps as possible without overlapping. Place half of the eggplant on top of the bread, followed by another 1 to 1 1/2 cups tomato sauce. Add a second layer of bread and repeat the same. 

Step 5

Cover the layer of bread with tomato sauce and to make the top crunchy and juicy sprinkle some bread crumbs generously followed by freshly sliced tomatoes. Sprinkle some salt and pepper as well if you want you can sprinkle some mozzarella cheese. 

Step 6

Bake for 40 minutes at 400º F. Remove from oven and let rest for 10 minutes before cutting the lasagna into pieces. Add the basil leaves as garnish and some balsamic vinegar if you prefer. 

You can even add some balsamic syrup to enjoy the warm and tasty Lasagna! 

Chocolate Pudding

Step 1

In a medium saucepan, combine cornflour, sugar, and salt. Pour in 1/2 cup milk in a thin stream, whisking with a balloon whisk as you go, till the cornflour has dissolved completely. Pour in the rest of the milk and mix well.

Step 2

Place the saucepan on low heat, stirring often. Scrape the sides and bottom with a silicone spatula or wooden spoon to ensure there are no lumps and the milk isn't burning. Stir till it begins to thicken enough to coat the back of the spoon, about 5 minutes. The milk should have just begun to simmer.

Step 3

Add the chocolate and stir till it is completely melted and the mixture thickens much more. Turn off the heat, add the vanilla and mix well. Pour the hot mixture through a sieve into a bowl so that any lumps can be discarded.

Step 4

Let the pudding cool uncovered at room temperature (it will thicken further), for about 30 minutes, then refrigerate for at least 3 hours or overnight, again uncovered. If you want to avoid 'pudding skin' that forms as the pudding cools, place a piece of clingfilm directly on the surface of the pudding although some may don't like the idea of plastic on hot pudding!

Step 5

Before eating, give the pudding a good whisk (this breaks down the pudding skin too) for the silkiest texture. Add an optional but recommended dollop of whipped cream and some grated chocolate or cocoa on top! Store the pudding in the fridge for 2 to 3 days, preferably without the cream.
